WHAT TYPE OF EVENTS DO YOU OFFER?

We cook whole roasted pigs and whole roasted lambs or goats. We cook paella, a Spanish rice based dish that is cooked over a fire pit outside. We also create beer-pairing meals, with several courses and desert, all of them specifically chosen to complement the beer selections.

HOW MANY PEOPLE CAN YOU CATER TO?

If you want to serve the piglet or lamb, the amount of people we cater depends mostly on the size of the piglet or lamb. A 30-40lb piglet can serve around 30 people. Please see sample menu for further information. If you want to serve paella, the large (23”) paella pan normally serves 25-30 people. Larger groups are possible. Beer-pairing meals are usually customized to sit about 40 people. Contact us for more details.

WHAT’S INCLUDED WHEN I BOOK A PACKAGE?

Our event packages are usually customized but the Sample Menus will give you an idea. Usually price includes the roasting/cooking at your location, side dishes, serving and cleaning after the event.

WHAT IF THE NUMBER OF GUEST CHANGES BEFORE THE EVENT?

Final guest count needs to be confirmed 12 days before your event. You can add guest count but not decrease at this point.

HOW LONG IS THE COOKING TIME?

Please check the Sample Menu for the descriptions.

HOW IS THE FOOD SERVED?

It will depend on which package you choose. Usually, we start with salad and appetizers / tapas, followed by the main dish (pig/lamb/paella). All dishes are served family style where a large platter is usually shared between 4-6 guests. You can also request for a buffet style where guests can serve themselves from our serving table.

DO YOU BRING TABLES TO SERVE THE FOOD ON?

Yes, we have our own table set up for preparing food for serving.

WHAT HAPPENS IF IT RAINS?

We have our own tent. However, if there is a covered area or shelter, that would help us. Obviously, we cannot predict exactly what mother nature will do, but following the weather reports, we can avoid having an event if extreme weather such as a Hurricane is in the forecast.

DO YOU NEED POWER SUPPLY?

Yes, we will need preferably 2 sources of regular household power outlet (120V). We have our own 100’ extension cord.

HOW DO YOU PRICE FOR CHILDREN?

We asked that you account for half the price for children below 10 years old if they are sharing the meals.

WHEN WOULD YOU NEED FINAL CONFIRMATION ON NUMBER OF GUEST AND FOOD?

Final decision shall be confirmed 96 hours (4 days) before event. We will also email you with the final confirmation by then.

WILL YOU NEED TO SEE THE VENUE?

Yes, this is one of the most critical parts of our planning process. This is usually done before we are able to agree to our service. Not all venues suit our events. This is a case-to-case basis. However, we will try to accommodate as best as we can.

CAN WE HAVE OUR OWN TABLEWARE AND SET UP?

Absolutely, and we will work with you on the details for serving and placing our dishes.

DO YOU COOK THE MEAT/ INGREDIENTS FROM RAW/FRESH ON SITE?

Yes, except for some of our appetizers that require to be cooked in advance to ensure flavor development.

HOW MUCH SPACE DO YOU NEED TO SET UP?

We would require at least 15 x 15 feet space to set up.

WHAT ABOUT VEGETARIANS AND GUEST THAT HAVE FOOD RESTRICTIONS? DO YOU CATER FOR THEM?

Yes we do, but please note that they will be restricted from our main core dishes such as the roasted meats and paella. Our meats are marinated with all natural ingredients and organic products and spices. Please let us know 4 days before or as early as possible to ensure we can cater to their needs.

WHAT TYPE OF HEAT SOURCE DO YOU USE AND DOES IT GET SMOKY?

We may use briquette occasionally but mainly it is a mix of wood lump charcoal and dried wood. There will be smoke due to the type of heat source and the nature of the cooking process but we will try to keep it to a minimum.

WHAT ABOUT LEFTOVERS?

We will help you package the leftovers into your dishes and bowls.

HOW DOES THE PAYMENT WORK?

We require a 50% deposit to confirm booking. We take debit card, credit card, paypal, venmo or cash. As soon as we receive your booking form we will reply with the details on how to make payment. The balance payment shall be paid before the hour of the service starts.

HOW MANY STAFF DO YOU PROVIDE AT AN EVENT?

We usually have one staff with the chef at an event of about 20 people. Additional staff will be added as needed depending on the number of guests.

WHAT IS THE MINIMUM NUMBER OF PEOPLE THAT YOU CAN CATER TO?

There is a suggested number of people on the Sample Menus but it is actually based upon package price. Please contact us for any custom arrangements.

HOW LONG WILL YOU SERVE FOR?

It depends on the arrangement but typically lasts about 3-4 hours. This excludes setup and clean up.

DO YOU NEED HELP WITH EQUIPMENT SET UP?

We have planned and design our equipment so that we can set it up on our own but you are most welcome and we will appreciate any help provided. We make sure every set up process is done safely.
